San Isidro 39 is an uncommon Costa Rican variety from the Las Lajas micro mill, operated by Francisca and Oscar Chacón in Sabanilla de Alajuela. For their signature Black Diamond natural process, only fully ripe cherries above 22° Brix are selected. They are washed, density-sorted and electronically sorted before slow sun-drying in greenhouse patios for 22–30 days. The coffee then rests for at least 60 days before hulling and final classification.
The expected cup profile, based on the green-coffee QC, is intense and complex: strawberry, red currant and floral notes, supported by winey character and a full body.
